Preheat the microwave to 600 watts and dice a 70-gram onion.
Prepare 100 grams of chicken ham by cutting it into the same shape as the potatoes.
Peel and cut a 250-gram potato into small cubes, about 1.5 cm/0.5 inches in size.
Place the potato cubes in a microwave-safe bowl and microwave for 5 minutes at 600 watts.
Heat 5 grams of olive oil in a pan over medium-high heat and add the microwaved potatoes, frying for 3-4 minutes until they start to brown.
Add the diced onion and chicken ham to the pan, frying for an additional 3 minutes or until the onions are caramelized.
Create three small holes in the mixture and add a tiny bit of oil to each hole before cracking an egg into each hole.
Reduce the heat to medium-low, season with salt, pepper, and chili powder, and add 25 grams of soy sauce. Cover the pan with a lid to trap steam.
Cook for 2-3 minutes until the eggs are done, then garnish with fresh cilantro.
